Jakarta : Food Tasting : C's Steak and Seafood

Innovative 'Farm To Table' dining anyone?



C's already well-known with it's reputation as a place for great steak and seafood. Even though it's located at prestigious Grand Hyatt Hotel Jakarta, don't you know you still can get a good price while dining here? 


People oftenly intimated when dining at a 5 star hotel restaurant, or maybe, they're just visiting when they're having a special occasion. That's why, C's changing their concept and also their menu, so everyone could welcome. 

C's offer fresh and high quality ingredients, and what I like is they're using 'farm to table' concept. They're work with the local farmers and most of the ingredients are from Indonesia. They also put some Balinese seasalts on each tables to amplify their concept.

 The dinner starts with some Rosé. It's a bit sparkly and fruity in taste.
 

And a complimentary bread. It was a kind of pita bread because it's puffy, and had nice crust.

Then we start the dinner that prepared by Chef Matt Demery. This one is Crab with Uni, Smoked Trout Roe, Violas Flower. The presentation was quite unique, because they're using a tin can that usually used for canned foods. The crab, I think they're using the canned frozen crabs? Because it's a slightly chewier in texture. The Uni, really shines in this dish, because it's soooooo fresh, sweet and it's just melts-in-your-mouth! I always love Japanese-inspired food. So this one is my favorite !


Another interesting dish is this Sweetbreads with Mac and Cheese, White Asparagus and Morel Ravigote. Sweetbreads is not bread ! haha.. Sweetbreads is a name of an offal which actually thymus or the pancreas. I'm not sure what's it's name in Bahasa Indonesia, and I don't know if I ever have eaten this before, but I found the taste was pretty new for me. 

The sweetbreads was fried, so it looks like fried chicken. Some parts are mushy, smooth and creamy, but some parts are meaty just like eating fried chicken. The difference is this sweetbreads has distinctive taste, that could be disturbing for some people. The sweetbreads serves with amazing mac and cheese, which sooo creamy and cheesy. Morel mushroom also added to give the earthy taste to this dish.

Next is 45 Day Dry Aged Galician Striploin with Confit Potato, Roasted Carrot, Housemade Steak Sauce. The striploin was imported from Spain, and it was dry-aged in the process. Dry Aged beef is different with the usual beef, because you won't get that super tender texture when you eat it. It's has more 'bite', but it has more intense beefy flavor in it. Unfortunately the sauce was too spicy, so I couldn't tasted the steak really well. But I can taste the smokey taste in it, since I've heard it's grilled with charcoal.


Next is a memorable dish for me from that night, Epoisse with Red Wine Apple Butter, Granola and Norlander.  Époisses de Bourgogne is a lovely cheese from France, it was gooey and soft in texture. The taste was soooo creamy, salty, sweet, and bit pungent. I always love this type of soft cheese though, just like camembert or brie. So yeah, this one is my new favorite!! The Cheese was served with sweet and jammy  red wine apple butter, which goes perfectly with the pungent cheese. And granola and crispy Norlander bread that added the crunch texture. Awesomely yummy !

 To close the dinner is C's Housemade Smores. As you can see, this is definitely a deconstructed Smores. The graham cracker and nut topping has a burnt taste that wasn't pleasant to my palate. But the dark chocolate mousse and marshmallow is really good. Since I already finish a creamy cheese dish before, I couldn't finish this one because my tummy kind of bloated :p 

Last words, I really had great experience that night. Thanks Chef Matt Demery and team ( and my dear friend Chef Lucky ) for serving us some new and fresh taste. And thank you Chef Rolf Knecht, Ibu Gina, Emilio and Mas Burhan Abe for hosting us.

  1. Oh myyy, steaknyaaa ^o^... Looks yummy and juicyy ;).. Haven't been here, but C's S&S resto is quite familiar since my premier customers often talk about it.. Will go someday to give it a try ;)
