Recipe : Corn Fritters / Perkedel Jagung Manado Style

Crispy, Light and Addictive !


Okay I have to admit that I don't do this post on purpose ! I just make this Indonesian side-dish/snack today because I'm craving it, and I just thought why not I share my recipe here in the blog ! As you can see, the picture was on 1:1 size, because I took the photo for Instagram purpose, not for blog purpose ( sorry ! )

I know many people maybe familiar with the Southern American style corn fritters. But hey, you should definitely try out this Indonesian-style corn fritters, or we usually called it 'Perkedel Jagung' or 'Bakwan Jagung'. Corn Fritters is my allllll time favorite snacks ! The sweetness of the corn, mixed with the crunchy light batter, was a perfect combo. 

In Indonesia, we also have many type of Corn Fritters. But, the one that I like the most is the one from Manado. Manado is the capital city of North Sulawesi, and I like how they do their 'Perkedel Jagung' because it's very crunchy and crispy. I also like how they use the Coriander seeds in it, because it makes it very fragrant ! They also makes the fritters very flat instead form it into like a dough balls, this way is to make the fritters even crunchier and light IMO.

So here they are, the lightest and crunchiest corn fritters recipe, that will easily gone in minutes because how addictive they are ! 

Perkedel Jagung Manado ( Manado-Style Corn Fritters )
 Serves : 10 

Ingredients :
400gr Corn Kernels
2 Eggs
150gr Rice Flour
6 tbsp All Purpose Flour
3tsp Salt
1 tbsp Grind Coriander Seeds ( or less if you don't like it so much )
1tsp Pepper
200ml Plain Water
9 cloves of  Red Onions
4 Cloves of Garlic
2 stalks of Spring Onion, sliced thinly.
4 Kaffir Lime Leaves, sliced thinly.
 Vegetable Oil for frying

Instructions :
1. Put the Red Onions and Garlic on your mortar and pestle, and pound it until it's nicely mashed. You can use Food Processor for this one.
1. Mix the dry ingredients together which is Rice Flour, All Purpose Flour, Grind Coriander Seeds, Salt and pepper. Then pour the water slowly while you whisk them. 
2. Put the eggs, and whisk thoroughly. Put in the corns, pounded red onions and garlic, spring onions and kaffir lime leaves, mix well.
3. Heat the oil in the frying pan, pour the batter slowly to the oil with a ladle ( make it in flat form ), in low heat. Fried thoroughly just until it's light in color ( around 3-5 minutes ).
4. Serves while hot !
