Recipe : Soft Gingerbread Cake With Walnuts and Creamcheese Frosting

Christmas is coming soon! It's always my favorite time of the year, because it's a month of celebration and joy!


Any celebration wouldn't be complete without a cake, right? I loveeee baking and I love making cakes! The beauty of it always brings joy for anyone who sees it.  So this time I will give you my ( secret ) recipe which very perfect to make when it's Christmas time !

Gingerbread cookies is always related to Christmas. So in this recipe, I make the sponge cake with spices that usually been used when making gingerbread cookies. And yes, I hate dry and heavy-batter cake. I always love a soft, springy and moist cake, so when it goes to your mouth you could say......... "It's so fluffy I could dieeeeeee !" 
Ok, maybe I'm too hyperbolic. But seriously, when I give this cake to my family, even my dad ( who didn't like eating sweets ) was asking for more. You should try this recipe and you'll know why! :D

This cake also using Cream cheese as the frosting. Why? Well... It's because... I likeeeee cream cheese frosting. Just like when you eating Red Velvet or Carrot Cakes, cheese makes everything better! And yes, the warm flavor of the spices was actually goes really well with the cream cheese. Nom nom !

So in this post I will post step-by-step procedure for making this cake. Well... It's actually really hard to bake and taking photos at same time. But I had a good time when making this post. Hope it will be useful for you who read this. And oh, for this post I borrow the sexy Kitchen Aid Artisan Mixer from Luscious Cakery. I would loveeeee to have one in my home ! My dreams from soooo long!

 Soft Gingerbread Cake 
With Walnuts and Creamcheese Frosting

Ingredients : 
150gr Flour
25gr Corn Starch
10gr Spices Mix ( Ground Cinnamon, Ginger, Cloves )
8 Eggs
200gr Sugar
30gr SP Emulsifier
A Pinch of Salt
100gr Butter ( Melted )
100gr Canola Oil
50ml Milk 
1tsp Vanilla Extract
250gr Chopped Walnuts

Cream cheese frosting :
150gr Butter 
210gr Powdered Sugar
250gr Cream cheese
Vanilla Extract ( Optional )

Instructions :
1. Pre-heat the oven to 175°C. Combine Eggs, Sugar and SP Emulsifier in the mixing bowl, and beats in Medium Speed.

Yes this is the 'magic' ingredients, SP Emulsifier ! You can found this in every baking store nowadays, it's a great invention that helps to maintain the stability of the batter, increased your cake volume ( no need baking powder ), and make your life easier for sure ! :p 

Beats until pale and increased in volume, and had that silky smooth glossy textures. This could takes 10-12minutes.

2. Combine the dry ingredients, which is flour, corn starch, spices mix and salt. And don't forget to sift it!


3. Put the speed to low, add the dry ingredients and milk, alternately, to the mixing bowl.


4.  Add the vanilla extract, melted butter and oil to the batter. And add the chopped walnut, stirred gently.



5. Line 4 - 20cm diameter Baking Pans and don't forget to line the parchment paper. Put the batter evenly on each pans, and bake for 25 minutes.

6. Prepare the cream cheese frosting with beating the butter until pale in color. 

7. Add the powdered sugar slowly.

8. Add the Cream Cheese and Vanilla Extract, and beat until smooth. 

9. After the sponge already baked and cooled down, frost it with the cream cheese frosting.

10. Decorate as you like! This time I'm doing a 'rustic' looking cake, so I just make the textures with small spatula. And I'm using a white chocolate and make it like a tree ! Don't forget to refrigrate the cake before serving, to make the frosting more set.
